Three Bean Turkey Chili
A hearty, spicy, flavorful meal that is protein, complex carbohydrates and fiber rich.
What you will need:
3 15 - ounce cans of your favorite beans. For this recipe I used Black Beans, Red Kidney Beans, and Lentils
1 lb 99% Lean Ground Turkey
1 1/2 15 -ounce can of low sodium tomato sauce
5 Guajillo Peppers
1 tablespoon of Canola oil
1 tablespoon Ancho Chili Powder
2 tablespoons Chili Powder
1 tablespoon of Smoked Paprika
1/2 tablespoon of Cumin
1 tablespoon of dried Parsley
1 tablespoon of dried Cilantro
1 tablespoons of cracked Black Pepper
2 teaspoons of Salt
5 pieces of Garlic, chopped
1 whole shallot, diced
1/4 Onion, diced
Green Onion for garnishing
Instructions:
First, we need to rehydrate the Guajillo Peppers: Boil for 10 minutes and let steep for 20 minutes. Keep the water used to boil the peppers to use later.
2. Heat a medium sized sauce pan or pot with Canola oil. It should be large enough to whole 4 quarts. When oil is hot, add diced onions and shallots and chopped garlic. Cook until they soften.
Cook until onion, shallot, and garlic begin to sweat.
3. Add the ground turkey. Cook until brown. While this is cooking, pulverize three Guajillo Peppers in a food processor or blender and salt. It should be the consistency of a thick sauce.
4. With the remaining Guajillo Peppers, slice into pieces as thick or thin as you’d like. Add them to the pot with the rest of the vegetables.
5. Add 1 tablespoon of the blended Guajillo sauce to the pot. Add the Chili powders, cumin, smoked paprika, black pepper. Mix thoroughly.
6. Open can of beans and place in a strainer. In order to drain and rinse thoroughly, run over cold water. This will ensure the removal of excess salt. This should be done one can at a time.
7. Add cleaned beans to the pot, one can at a time. Stir.
8. Add 1 tablespoon of Guajillo sauce. Repeat steps 6, 7, and 8 until all beans and Guajillo sauce have been incorporated.
9. Pour in tomato sauce, parsley and cilantro. Mix thoroughly. Cover with lid and let simmer for 20 minutes, checking and mixing periodically on a medium - low heat. If the sauce is too thick, use the left over Guajillo water until you get the consistency that you like!
10. Serve in your favorite bowl. Slice green onion, garnish and enjoy!
