Chocolate Triple Threat Chocolate Chip Cookie
Chocolate all around. Truly, a chocolate lovers cookie.
Ingredients
2 cups 100% Whole Wheat Flour
1 cup 100% Unsweetened Coco Powder
1.5 tablespoons of cinnamon
1 tablespoon of baking powder
1.5 cups light brown sugar
1/2 cup white granulated sugar
2 eggs
16 tablespoons plant based butter (I recommend the Earth Balance brand)
Half of a bar of white chocolate
1/2 cup 72% Cacao dark chocolate chips
3/4 cup of 59% Cacao semi-sweet chocolate chips
Directions:
Step 1: Take out and measure all ingredients and make sure they are room temperature to ensure a even mix. Preheat oven to 350 degrees.
Step 2: In large bowl, combine your dry ingredients and mix thoroughly.
Step 3: In a separate bowl, cream your butter and sugars, starting with brown sugar. During the process, you are making sure you are whipping air into the butter and sugar. This ensures that your cookies are light and airy.
Quick tip: If your butter is still cold, place it in a microwave safe container and heat it in the microwave for 10 - 15 seconds.
Step 4: Pour chocolate chips into dry ingredients. Mix thoroughly. Rough chop the white chocolate bar into chunks. Add this to the dry ingredients and chocolate chip mixture.
Step 5: Fold in wet ingredients into dry ingredients in batches of three. Each batch should be folded in evenly before adding in the next.
Step 6: Using a spoon, scoop out the cookie batter onto a baking sheet lined with parchment paper. Leave about an inch and a half space in between each cookie.
Step 7: Put cookie batter in oven to bake for 15 minutes. For a crispier exterior, leave in oven to bake for an extra 3 minutes.
Step 8: Take out of oven, cool, and enjoy!
